Make this creamy strawberry chia pudding in 2 minutes

  1. Make the strawberry milk. Blend the strawberries, coconut milk, soaked dates, sea salt, and vanilla extract together until very smooth. 
  2. Mix in chia seeds. Spoon the chia seeds into a large mason jar with a lid, then pour the strawberry milk on top. Close the jar lid and shake it well to evenly distribute the chia seeds. Let it sit overnight (or for at least 30 minutes) in the refrigerator. 
  3. Let it chill. After it’s sat for at least 30 minutes in the fridge, garnish with additional strawberries as desired and serve chilled.

This recipe serves 2, so share with a friend or save the other half for your healthy breakfast meal prep! 

To store: store it in a mason jar with a closed lid for up to one week.

Ingredients

  • 1 cup hulled, halved strawberries
  • 1 cup canned coconut milk (full fat and lite both work well; you can use other types of non-dairy milk as well, the results may just not be as creamy)
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon fine grain salt
  • 2 Medjool dates, pitted and soaked in boiling water for 10 minutes before draining well
  • 6 tablespoons chia seeds

Instructions

  1. In a blender, combine all the ingredients except for chia seeds and blend until very smooth.
  2. Spoon the chia seeds into a large jar mason jar with a lid, then pour the strawberry milk on top.
  3. Close the jar lid and shake well to evenly distribute the chia seeds. Let it sit for at least 30 minutes and up to overnight.
  4. Garnish with additional strawberries and toppings as desired. Serve chilled and enjoy!
